This monstrosity is my first quiche creation!
It’s pretty ugly, mostly because I forgot to add the spinach until I had already poured everything in… And I think I needed an egg or two more to fill it in. But those issues aside, it’s pretty good!
I used this recipe, with a few notable exceptions. 
 I made real bacon. Bacon bits? No. Not acceptable
 I used fat free half and half (I didn’t even know this existed until I was at the store). I have no idea what this did to the quiche…
 I added spinach (belatedly)
 I used mozzarella instead of swiss. Oh yeah, I added a bit of leftover goat cheese to the mix too. 
 I didn’t measure anything out, I just eyeballed the ingredients. (thus the underfilled piecrust…)
So.. I definitely have room for improvement, but this worked pretty well! And I used up all the eggs that were sitting in the fridge. Next time I will use less onion, put the spinach on the bottom, and maybe experiment with different cheeses. And add pepper. I put a bit in this, but more would have been good. I saw a different quiche recipe that called for nutmeg, so that’s interesting. 
Anyone have any good quiche recipes?
